Many west coast operators have used them for years to offset rising labor and other costs. Now, given record inflation and other economic pressures, restaurants around the country, as opposed to solely raising prices, are adding a variety of additional charges to customer tabs to maintain economic viability.
The use of surcharges and related fees comes with legal risk and responsibility that all restaurants should be familiar with. The failure to abide by applicable laws can lead to expensive litigation, including costly consumer and employee class actions.
